Vine-Ripened Tomatoes, Mozzarella & Basil

How to make Italian caprese salad. Thick slices of fresh ripe tomatoes, fresh mozzarella cheese and basil from the garden (or market) dressed simply with a vinaigrette sauce. Also known as insalata caprese, this simple salad shines from quality ingredients that blend beautifully to get your appetite going.
Ingredients
4 vine ripened tomatoes, 1/4" slices
1 pk fresh mozzarella cheese, 8oz, 1/4" slices
1 bunch Italian basil, rinsed

Vinaigrette
1 TBSP extra virgin olive oil
1 TBSP aged balsamic vinegar
1/4 tsp salt, or to taste
1/4 tsp fresh ground black pepper
Directions
  1. Whisk together all vinaigrette ingredients and set aside.
  2. Arrange tomato slices into a single layer. Drizzle vinaigrette over tomatoes.
  3. Top each tomato slice with mozzarella cheese followed by a single basil leaf. (You may need to cut large leaves in two.)
  4. Arrange caprese stacks on a platter in overlapping fashion. Serve fresh and enjoy!
