Garlic Cabbage w/ Scrambled Eggs

Garlicky cabbage, scrambled eggs and fish sauce makes for a surprisingly addicting combination. Egg-fried cabbage is a great addition to breakfast or lunch. Easy to prep, quick to cook. If you're adventurous, throw in some salted fish or anchovies for added pungency. Also great with broccoli or cauliflower.
Ingredients
1 whole head cabbage, coarsely shredded
6 large cloves garlic, minced
3 large eggs, scrambled
1 tsp fish sauce
1/4 tsp black pepper, ground
1 TBSP vegetable oil
Directions
  1. On the stovetop, heat a wok or large skillet over medium heat. Add oil and garlic. Stir garlic until golden. Add cabbage, fish sauce and black pepper. Cook until cabbage starts to wilt.
  2. Add scrambled eggs. Cook just until eggs start to solidify. Turn off heat. Residual heat will continue to cook eggs.
  3. Serve hot. Enjoy!
