Gyro Meat, Feta Cheese, Olives & Spinach

Make thin crust Greek pizza piled with gyro meat, feta cheese, black olives, spinach and tomatoes. A key ingredient to making this a Greek pizza is the gyro meat. We really like the seasoned, flavorful mix of ground lamb and beef. You can usually buy ready-to-eat gyro meat from a gyro cafe or deli shop, otherwise, look for it precooked and frozen at large chain supermarkets or local mediterranean markets. Another main ingredient to creating a Greek flavor profile is the feta cheese. For authentic flavors, use quality traditional or barrel aged feta cheese made from sheep or goat's milk (or a mix), not cow's milk. And when it comes to pizza dough. You don't have to make it yourself anymore. You can find great options for ready-made pizza dough at Trader Joe's or other supermarkets. Choose regular, wheat, or herbed.

Making pizza is fun. You can pick your own toppings, create your own themed pizzas, and if you have kids, it's a great way to get them involved in cooking too. Have your pizza your way. In this recipe, we were inspired with Greek flavors. Try it with our Greek salad. They go great together.
Ingredients
1 lb pizza dough, ready-made
1/2 lb gyro meat, lamb and beef mix
7 oz feta cheese, crumbled
8 oz fresh mozzarella cheese ball, sliced
3.8 oz can black olives, sliced, drained
16 cherry or grape tomatoes, sliced in half
2 cups baby spinach, washed
3 TBSP pizza sauce
2 TBSP salted butter, melted
3 cloves garlic, crushed and minced
1 tsp extra virgin olive oil
1/4 tsp salt
1/4 tsp black pepper
dried oregano
crushed red pepper
Directions
  1. Remove pizza dough from bag and rest on a floured work surface. Allow to come to room temperature and rise for 20 minutes.
  2. Meanwhile, dress sliced tomatoes with olive oil, minced garlic, salt and black pepper. Allow to marinate for 15 minutes. Then squeeze moisture out of tomatoes and set aside. Also reserve the leftover bits of garlic drained of moisture.
  3. Microwave spinach for 1 minute on high or until just wilted. Let cool then squeeze and discard water from spinach. We don't want moisture on the pizza.
  4. Adjust oven rack to middle position and preheat oven to 425°F.
  5. Stretch pizza dough into a single 12" or two 6" pizzas. Place on oiled pizza pan. Brush pizza dough with melted butter. Spoon pizza sauce on and spread evenly over surface. Lay down spinach, olives, tomatoes, bits of garlic and gyro meat. Sprinkle with oregano and black pepper. Top with slices of mozzarella cheese and crumbled feta cheese.
  6. Bake pizza for 12 minutes or until crust is golden and mozzarella cheese bubbles. The feta cheese will keep it's crumbled shape and won't melt or bubble. Remove from oven.
  7. Slice Greek pizza. Serve hot with crushed red pepper on the side. Enjoy!
