Horiatiki Salad w/ Feta Cheese

How to make Greek salad. Also known as horiatiki salad, this salad has robust savory flavors. Crisp cucumbers, refreshing tomatoes, olives, and red onion are dressed with a tangy dressing. Finish it off with crumbled feta cheese and it couldn't be tastier.
Ingredients
2 large cucumbers, cut into thick chunks
3 vine ripened tomatoes, quartered
1/2 red onion, thinly sliced
1 green bell pepper, thick chunks
4 pickled pepperoncini peppers, 1" slices
1 cup black (kalamata) olives
1/2 cup parsley, flat-leaf, coarsely chopped
1 pk feta cheese, 100% sheep's milk,
   (imported from Greece)

Dressing
2 TBSP extra virgin olive oil
2 TBSP lemon juice, fresh squeezed
1 TBSP red wine vinegar
1 tsp dried oregano, crushed
1 clove garlic, crushed and minced
2 tsp salt
1/2 tsp black pepper, fresh ground
Directions
  1. Mix dressing ingredients. Set aside.
  2. Mix all salad ingredients except feta cheese. Drizzle dressing over salad. Toss lightly. Crumble feta cheese on top. Refrigerate and chill for at least 30 minutes to allow flavors to meld.
  3. Serve Greek salad chilled. Enjoy!
