How to make taqueria-style creamy salsa verde. We like regular salsa verde, but we really love it smooth and creamy the way our local taqueria makes it. And we'll make it so by adding half an avocado to the sauce. This is our take on their must-have green sauce. Our salsa verde recipe calls for just a few bright ingredients: Roasted green tomatillos and jalapeno peppers, garlic, avocado, onion, cilantro and lime juice. We like our tomatillos roasted, but we also like the sharpness of raw tomatillos, so we'll keep one tomatillo raw to add a little bite. Make your own tacos, burritos or quesadillas at home and serve them up with our creamy tomatillo salsa. You've got to have this essential green sauce to make your Mexican meal authentic. It's ridiculously easy, healthy, spicy and delicious!
Ingredients
3 large tomatillos, husked, roasted and peeled
1 large tomatillo, husked, raw, quartered
2-6 jalapeno peppers, as desired, roasted
1 clove garlic, roasted
1/2 avocado, ripe, peeled and seed removed
1/2 yellow onion, quartered
1/2 cup cilantro, coarsely chopped
1 1/2 tsp salt
2 TBSP lime juice, fresh squeezed
1/2 cup water
Directions
  1. Roast Tomatillos, Jalapenos and Garlic
    Before roasting the tomatillos and jalapenos, poke them with a fork on opposite sides to penetrate the skin. This enables steam to escape as they roast and will keep them from popping or bursting. No need to poke garlic. Roast tomatillos (remember to reserve one raw one) and jalapeno peppers until charred and blistered, turning them to get all sides charred. You can do so on the grill or in the oven by broiling. Let rest until they're cool enough to handle. Peel off any obvious blackened, blistered skin. Remove and discard stems.

  2. Combine all ingredients in a blender. Pulse just until smooth and evenly processed. Don't overprocess. You could end up adding too much air into the sauce. Taste and adjust salt and lime juice as desired.
  3. Serve salsa verde fresh with tacos, burritos or quesadillas. Any leftover green sauce can be stored in an airtight container and refrigerated. Enjoy!
